Blake loves strawberries, almonds and prefers muffins over cupcakes… so I came up with a strawberry muffin with a simple glaze! It is delicious, not too sweet, and the flavors work very well together!
1/2 cup whole wheat pastry flour
1/4 tsp baking soda
3/4 tsp baking powder
1/4 cup raw sugar
2 strawberries finely chopped
1/2 tsp almond extract
1/2 tsp stawberry extract
1/4 cup + 1 tbs almond milk
Mix all the dry ingredients together, then add the wet. Stir until combined. Bake at 375 for 15-18 minutes.
for the glaze and topping
3 tbs vegan powder sugar
3 strawberries chopped, saving the juice to mix with the sugar
chop up some almonds to sprinkle on top
Mix the chopped strawberries and powder sugar together, if too thick add a little water, then dip muffins in glaze and top with the chopped almonds.
