Coconut milk is a great vegan cream substitute. You can make many things with it. In this recipe I am using an ice cream maker so I used lite coconut milk to cut some of the fat and calories.
Tonight my son had a slumber party with his cousin and ice cream sandwiches were requested. We made this chocolate banana ice cream recipe to compliment our double chocolate banana “cake cookies”!

1 can chilled lite coconut milk
1/3 cup non-dairy milk, i used almond coconut blend (almond or soy works best)
1 banana (frozen if possible)
1/4 cup brown sugar
1/4 cup agave nectar
2 tbs cocoa powder
Place all ingredients in a blender or food processor until well combined.
Follow directions as instructed with ice cream machine and ENJOY!

6 servings=130 calories per serving
