Peach Blueberry Oat Crisp

This Peach Blueberry Oat Crisp is healthy and simple. 

It can be also be made without the crust to save time, ingredients, and calories! It cuts the calories in half at less than 100 per serving!

Ingredients makes 8 servings

Crust
1/2 cup cashews

1/4 cup oats
4 prunes
2 tsp coconut oil
1 tsp agave nectar

Filling
1 cup blueberries

1/4 cup non-diary milk of choice, I used vanilla flax milk for this recipe
1 tsp agave nectar
3 peaches sliced and chopped

Topping
1/2 cup oats
4 tbs dark brown sugar
2 tsp coconut oil
1 tsp agave

Recipe

In a food processor combine all crust ingredients then press into a baking pan.

Over medium/low heat combine the milk and blueberries and cook until blueberries are soft. Slightly mash the blueberries and keep stirring until it forms a “filling.” Then add the peaches and pour on top of the crust.

In a bowl stir together all topping ingredients and add on top of the fruit filling.

Bake at 350 for 12 minutes then at 325 for 20 minutes. If making without the crust 350 for 20 minutes.
