Chocolate Coconut Pudding


Your family will never guess what is in this pudding! Avocados, tofu, coconut, chocolate….. these do not seem like ingredients that you would find in pudding but they work together perfectly.
My son can not get enough of the puddings and pies I make using avocados and tofu. It makes for a creamy rich dessert that everyone will love.
you could also use just avocados and a little more milk of choice if you don’t use tofu 


2 avocados
14-16 oz silken firm tofu (1 pkg)
1/2 tsp coconut extract
1 tbs cocoa
1 tsp coconut oil
1/4 cup dark chocolate or carob
3 tbs non-dairy milk of choice
3 tbs agave necter

Melt your chocolate or carob with the non-dairy milk. You can do it on the stove or in the microwave. I use a double boiler to ensure the chocolate does not burn.

In a food processor or blender combine avocados, tofu, extract, cocoa, oil, melted chocolate and agave. Process or blend until combined and creamy!

You can add more agave or some stevia or sweetener of choice, if you prefer. I make everything minimally sweet because it leaves room to drizzle something on top for my family to please individual taste buds.
