These vegan blueberry waffles are packed full of fiber, organic whole grains and flaxseed.
I like to make healthy homemade pancakes and waffles from scratch but if I’m in a hurry or just lazy Bob’s Red Mill mixes or Arrowhead Mills mixes are great!!! If you are cooking for kids they will have no idea that they are eating a healthy breakfast! Blake doesn’t even need butter on these because they are packed with so much flavor!!
1 cup Bob’s Red Mill Organic High Fiber Pancake and Waffle Mix (my recipe is an adaption from the recipe on the mix to make it vegan friendly)
2 tbs coconut oil
3/4 cup non-dairy milk of choice
*I use a 50/50 blend of almond coconut blend unsweetened vanilla and enriched original rice milk*
2 tbs unsweetened applesauce
1/2 cup blueberries
Mix it all together and ladle some into a hot and oil brushed waffle iron! These were topped with strawberries (Blake’s request) and lightly drizzled with agave. It’s sweet so don’t pile it on like some would maple syrup! No need to top with non-hydrogenated soy butter or nut butter, unless you want to, these waffles are packed with so much flavor!
